Of course, backing up your Dropbox folder using file backup is the method we recommend.
The Dropbox folder and files are stored on the local hard drive as well as the cloud, I have double checked this by still being able to open the files without an Internet connection.
But following the guide to mount the backup image I am now able to see the Dropbox folder and all the files are present, so they must have been backed up even though I can't see them by just browsing the image in file mode.
